Yummy Devil’s Food Cupcakes and Raspberry Cream Cheese Frosting!

Devil's Food

I don’t know about you but cupcakes are something that never gets old.  My kids and hubby love them all year long.  I just had to share this awesome recipe…we are making them for Valentine’s Day this year…but you need not worry…just change out the decorations and these work all year long!

Devil’s Food Cupcakes

  • ¾ cup boiling water
  • ¾ cup cocoa powder
  • ¾ cup butter (12 Tbs)
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 2 ½ cups cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup buttermilk

Preheat the oven to 350-degrees. Line two muffin tins with paper liners.

In a medium mixing bowl, whisk together the boiling water and cocoa powder. Cover the bowl and set the mixture aside.  In another bowl, sift together the dry ingredients, and then set them aside.

Cream together the butter and sugar in a large mixing bowl.  Add in the salt and vanilla extract, then the eggs one at a time.  When the mixture is light and fluffy, alternately stir in the buttermilk and dry ingredients. Finally, add in the cocoa water mixture and stir to combine.

Scoop the batter into the pans, filling no more than 2/3rds of the way full.  Bake for 20-25 minutes until a tester comes out clean.  Cool completely before frosting.
